Little Rick Spritz 

Few cocktails dominate summer quite like the Spritz cocktail, though make no mistake this is a beverage that can be enjoyed all year round. It's moreish and fruity flavour is deliciously refreshing, and with the addition of prosecco or a sparkling wine of your choice, you’re sure to be transported to the picturesque, sun-soaked shores of Italy - Spritz in hand! 

 

Despite conjuring up such continental images, this cocktail is surprisingly simple to make, and can be concocted using only two core ingredients - but you may add additional extras if you wish to! The drink being so simple means, like us, you'll easily be able to make one at home, but the key to the perfect, refreshing Spritz is getting the measurements just right. Although it’s often presented in a wine glass, a Spritz can also be served in an Old Fashioned or rocks glass – essentially a short tumbler used for serving spirits or cocktails with few ingredients.

 

For this cocktail you will need: 

 

 

Top your large wine glass or short tumbler up with an ample handful of ice and add to this a half measure of Little Rick Raspberry and Coconut drink, and another half measure of Prosecco. Garnish with a thick wedge of fresh orange or a handful of fresh raspberries. If you wanted to step it up a notch, a dash of Aperol would give this cocktail a nice fruity punch of flavour, or even a dash of Vermouth for a slightly more bitter taste - similar to a Negroni. 

Little Rick Colada 

 

Do you like Pina Coladas? Well, the chances are you are going to love our take on the classic tropical cocktail - The Rick Colada! The Pina Colada’s origins lie in Puerto Rico through and through, of this we are certain. But who in Puerto Rico first made it is up for debate. The most amusing origin story comes out of the Caribe Hilton hotel's Beachcomber Bar in San Juan, circa 1954 when the bartender allegedly spent a rigorous three months attempting to invent a cocktail and landed on the Piña Colada. Joan Crawford is alleged to have tried it, loved it, and even called it "better than slapping Bette Davis in the face." 

 

There is no cocktail more iconic or as refreshing as the pina colada. A splash of rum, refreshing pineapple juice, coconut milk blended with ice - you can almost smell the Caribbean. The pina colada has been around for decades, some even claim a whole century, and while newer variations exist, the general recipe has stayed true to the original, or at least what is widely considered the original, as has our version of the cocktail - The Rick Colada! 

 

For this cocktail you will need: 

 

  • Little Rick Piña
  • White Rum 
  • Coconut Milk 
  • Ice 
  • Fresh lime juice  
  • Pineapple (to garnish)
  • Maraschino Cherry (optional) 

 

 

For this cocktail, you will need to blend together a half measure of your Little Rick Piña, mix this with 2 parts white rum and 1.5 parts Coconut milk. If you want a sweeter kick you could add a dash of pineapple juice. To serve this cocktail, pour into a chilled (or even better, frozen) glass, then add plenty of ice and a wedge of pineapple and serve. Maraschino cherry and parasol optional!  

Little Rick Mojito 

Cocktail trends come and go but the mojito is timeless. A mojito, the refreshing and minty drink from Cuba that mentally transports you to a tropical location no matter where you’re drinking it, is a lot more than meets the eye. The drink also has strong associations with Ernest Hemingway, who was rumoured to have drank the cocktail often at one of his favourite bars, La Bodeguita del Medio in Havana. There’s even a sign on the wall that boasts his (potentially forged) signature and affinity for the drink, stating: “My mojito in La Bodeguita, My daiquiri in El Floridita.” Though Hemingway’s love of the mojito may be more myth than fact, that doesn’t stop tons of visitors from ordering the cocktail at the Havana bar every day. It’s not just the ideal drink for quenching your thirst or relishing during a fun night out. The traditional recipe is a fresh combination of rum, mint, lime, sugar, sparkling soda, and lots of ice, our Little Rick Mojito is inspired by this traditional recipe.

 

For this refreshing cocktail recipe, you will need: 

 

  • Little Rick Mint & Lime 
  • White Rum 50ml 
  • Dash of Lemon Juice
  • Crushed ice 
  • Fresh mint 
  • Fresh lime (to garnish) 

 

Firstly, if you want to have the authentic mojito experience, you’ll want to slap your mint leaves to release the flavour then rub them around the edge of a tall glass, then tear them once and drop them in. Add a half measure of your Little Rick Mojito mix. At this point, you’ll want to fill your glass with crushed ice and then add the rum, to this add a dash of zesty lemon juice. If you want a lesser alcoholic variation of this drink you could alternatively top up with soda water. Swizzle with a teaspoon to distribute the mint. Garnish with a sprig of fresh mint and a wedge of lime. If you don’t have crushed ice available - replace with ice cubes. 

 

Although Mojito is very easy to prepare, it’s also a cocktail with lots of personality, and unlike other long drinks, the basic recipe can be amended in order to satisfy everyone’s taste. You can replace the rum with gin or vodka; the lime with lemon, apple, strawberries, or any fresh fruits; the regular sugar with icing sugar or simple (sugar) syrup.
